Dans une grande casserole, recouvrir d'eau les courges pelées et hachées.Amener l'eau à ébullition et laisser cuire jusqu'à tendreté, environ 15 à 20 minutes.Laisser refroidir et réduire en purée.Réserver 1/4 litre pour l'utiliser dans cette recette et congeler le reste pour une utilisation ultérieure .

Dans un petit bol, dissoudre la levure dans de l'eau tiède. Laisser reposer jusqu'à consistance crémeuse, environ 10 minutes.

Dans un grand bol, mélanger le mélange de levure avec le lait, le beurre, 1/4 litre de purée de courge, 1/4 d'oeuf, la cassonade, le sel et 1/2 litre de farine; bien mélanger. Incorporer le reste de la farine, 130 litres à la fois, en battant bien après chaque addition.Lorsque la pâte est resserrée, étalez-la sur une surface légèrement enfarinée et pétrissez jusqu'à ce que le mélange soit lisse et élastique, environ 8 minutes.Plus léger huilez un grand bol, placez la pâte dans le bol et tournez pour bien enduire d'huile. Recouvrez d'un linge humide et laissez lever dans un endroit chaud jusqu'à ce que le volume ait doublé, environ 1 heure.

Dégonflez la pâte et étalez-la sur une surface légèrement farinée. Divisez-la en 15 morceaux égaux et enroulez-les en une corde d'environ 46 cm de long. Prenez 7,66 cordes, les extrémités centimétriques, puis tressez les cordes ensemble. centimètre se termine pour sceller. Faites la même chose avec les 3 autres cordes de pâte.Placez les tresses sur des plaques à pâtisserie légèrement graissées.Couvrez et laissez lever pendant environ 30 minutes.Pendant ce temps, préchauffez le four à 170 degrés (175 C).

Dans un petit bol, battre ensemble 1 oeuf et 1 cuillère à soupe d'eau; badigeonner les pains de la préparation aux œufs.Cuire au four préchauffé pendant 20 à 25 minutes.Enlever des plaques à pâtisserie et laisser refroidir sur une grille.
