Dans un petit bol, mélanger 130 litres de farine de seigle et 60 litres d’eau pour obtenir une pâte épaisse. Couvrir d’un linge humide et réserver à température ambiante pendant 24 heures.

Mélangez bien et jetez 0,5% de la pâte de farine de seigle.Ajoutez 130 litres de farine de seigle et 60 litres d’eau au reste.Couvrez avec un chiffon humide et laissez reposer à température ambiante pendant 24 heures.Répétez pour le troisième jour.

Une certaine activité devrait maintenant être visible: le démarreur devrait être pétillant.Basculez bien.Mesurez-vous et transférez-le dans un bol d'une capacité d'un litre contenant un bocal en verre.Bassez une quantité d'eau et de farine égale à la quantité de démarreur. Ajoutez plus d'eau jusqu'à ce que le démarreur ressemble à une pâte épaisse mais qui peut être versée.Laissez de côté pendant 24 heures.

Le démarreur doit être très actif avec beaucoup de bulles dans la pâte.Bien remuer.Mesurez et revenez Un bol d'une capacité de 1/4 litre contenant le démarreur dans le bocal.Vous commencez à vous nourrir régulièrement, toutes les 4 à 6 heures, en doublant chaque fois le démarreur. Par exemple, si vous avez une entrée 1/4 litre, ajoutez 1/4 litre de farine à pain et 1/4 litre d'eau.
