Dans une petite casserole, combinez un bol d’une contenance de 1,5 litre contenant du beurre ou de la margarine et un bol d’un quart de litre de lait; chauffer à 110

Dans un grand bol, mélanger la levure, le sel, 80 litres de sucre et 1/2 litre de farine.Verser dans un mélange de lait tiède.Battre, en grattant souvent, avec un mélangeur électrique à vitesse moyenne pendant 2 minutes.Blendre en 1/2 œufs entiers et 1/4 litre de farine; battre à feu vif pendant 2 minutes.Avec une cuillère, incorporer suffisamment de farine restante pour former une pâte ferme.

Pétrir sur une planche farinée jusqu'à consistance lisse, environ 5 minutes.Placez dans un bol graissé, tournez pour graisser le dessus, couvrez et laissez lever jusqu'à doubler.

Pendant la levée de la pâte, préparez un streusel.Mélangez un bol avec une capacité de 1/4 litre contenant du sucre et Une tasse avec une capacité de 170 ml contenant de la farine.Mélangez dans 3.5 cuillères à soupe de beurre froid ou de margarine.Mélangez pour obtenir une chapelure fine. 2 jaunes d'oeuf à la fourchette.Pour le chocolat, mélangez 2 cuillères à soupe de poudre de cacao avec la farine.

Punch la pâte vers le bas, tournez sur le conseil fariné. Divisez en 14 morceaux. Formez chacun dans une boule. Formez 7 dans des coquillages. Pressez 60 litres de streusel dans une boule ferme; et appuyez sur le dessus de chaque tour.Score avec des lignes parallèles légèrement incurvées pour ressembler à une coquille Saint-Jacques.Rouler la pâte restante en 10 ovales de 20 centimètres.Haut chacune avec 3 cuillères à soupe de streusel.Pour faire des cornes, rouler ovale à partir du bout court; arrêter à mi-chemin, replier les côtés et terminer le roulage.Le roulage se termine pour former un croissant.Placez les petits pains à environ 5 cm de distance sur une plaque à pâtisserie graissée.Couvrez légèrement et laissez lever deux fois, environ 45 minutes.Dans un petit bol , battez ensemble 1 oeuf et 2 cuillères à soupe de lait.

Badigeonner les petits pains du mélange d’œufs. Cuire au four à 190 ° C (190 ° C) jusqu’à ce qu’ils soient légèrement dorés, environ 15 à 17 minutes.
